Our Butter
The virtues of Isigny AOC butter have been extolled by discerning gastronomes since the 16th century. It has a delicate flavour, which gently unfolds in the mouth, releasing notes of mild hazelnut and milk. It is made with the utmost respect for traditional values. We selected the best milks of the Isigny region to make a butter of the highest quality. Isigny butter is recognizable by its inimitable buttercup yellow. It is one of very few butter to have been granted the status of an Appellation d’Origine Controlée, which identifies the product and the specific region that the ingredients originate from. AOC strictly defines the manufacturing process and enforces
controls to ensure each process is carefully followed.

Isigny AOC Butter sheet for pastry use AOC unsalted, 1kg, packing 10 p This butter is specially adapted for professional users.
It combines the quality of the AOC butter to the constraints of making perfect puff pastry. The sheet is just the right shape and ready to use straight away. It is very malleable and soft to work: the pastry or dough does not shrink after going through the rolling process, nor when it is cut and it does not break when it is folded, which ensures a good formation in the finished product. The quality of the risen product gives perfect, light and open textured patisserie. Your patisserie will have the subtle scent and flavour of fresh butter.

As the description UHT indicates, our UHT whipping cream has undergone sterilization at Ultra High Temperatures. Developed for discerning professional users, Isigny’s UHT whipping cream is a balanced product, offering excellent working qualities. The natural sweetness and taste of the original cream is preserved. The product also offers a good expansion rate; the cream remains stable under cooking conditions, and will resist separating when mixed with acid ingredients or alcohol, or when reducing.
